Paganum Yorkshire Dales beef is sourced from breeds that give superior eating qualities, such as Short Horn, Welsh Black, Highland and Belted Galloway.

All our beef production and suppliers farm using traditional methods by farmers who are committed to animal welfare, sustainable agriculture and conservation.

Over the years a suckler herd has been established, using the best of both native British breeds and continental breeds. These animals are ideally suited to the high Dales grassland and rich lower parkland.

The Beef animals are reared naturally, suckling their mothers from birth and graze at least two seasons at grass. A purpose designed feeding regime has been formulated with the help of an animal nutritionist, this enhances the texture, taste, consistency and overall quality of the meat.

Lamb

The sheep flock graze over the heather moors and lower parklands. The breeding sheep have been established over the past 50 years and are indigenous to the Wharfedale valley. They are farmed in a natural way utilising the diverse grazing which is available on the farm.

The lambs are Spring born to their home-bred mothers and suckle during the Autumn. The lambs are finished purely on grass, which ensures only the best quality of lamb is produced. This farming practice creates a wholesome, natural and unique product.

The farm is registered as farm assured and is subject to rigorous annual inspections, ensuring all aspects of animal welfare and environmental care are kept paramount.

Highland Beef

The Hellifield Highland Beef fold graze a mixture of rich lowland Dales pasture and the upland in the Yorkshire Dales and in Limestone Country around Malham and Hellifield.

Robert & Wendy Phillip and family are passionate about Highland cows and the quality of the beef they produce. Over a number of years they have built up a championship herd, regularly attending and winning prizes at many of the great northern shows.

As a result this family farm produces really excellent Highland cattle beef, with beautiful marbling in the meat, which is then well hung for a minumum of 21 days to produce some of the best tasting beef.

Yorkshire Dales Lamb

Paganum Yorkshire Dales lamb is fully traceable, and is hung for 7 to 10 days after slaughter. Our customers can be sure every lamb has had the very best quality of life, and comes with the farm assured standard. Well-produced lamb tastes twice as good.

The lambs sourced by Paganum are from the Yorkshire Dales. These are usually from Mules crossed with a terminal sire (Mules are the Blue Faced Leicester rams crossed with the original Dales breed, Swaledale ewes). These produce superior tasting lamb, with the Paganum guarantee of traditional farming methods.

The lambs are grazed in a mixture of rich lowland Dales pasture and the high moors, where clean air and limestone grassland contributes to the assurance of great tasting lamb. Our lamb is matured slowly, producing more succulent tasting meat.

Making A Purchase

Making a purchase could not be easier. Just browse our online shop, and add any items that you wish to buy into the shopping basket by clicking on the yellow ADD TO BASKET button. After you have finished your selection, click on 'View Basket' and you will be asked for a few details that we need to be able to complete your order.

We accept Visa and Mastercard. Backordered items are not charged until they are shipped. You may send your credit card information via phone, fax, snail mail or over the Internet.

When confirmation of order is received, this is to indicate that we have received your order. It does not indicate that a contract exists between us. We will indicate acceptance of your order, and hence a contract between us, when we send you an invoice. We have included this term to protect us in the case that a mistake has been made in pricing, we have inadvertently under-priced goods, or we are no longer able to supply a particular product for some reason. In the case of a change of price, we will always contact you first to ensure that the price is acceptable.

Shipping And Handling

Delivery is by next day parcel service to Mainland England, Wales, Southern and Central Scotland, Other areas can be shipped to at an additional cost. Your order will be shipped in special Eco Chilled Food Packaging incorporating British Sheeps Wool to ensure the quality of our product is maintained during delivery. Please contact us for more details. Minimum order value for chilled products is £40 (excluding Chorizo)
Fully Cured Yorkshire Chorizo is posted by Royal Mail. No minimum order for Chorizo.

Delivery Schedule

We will deliver your order as soon as possible, quality meat cannot be rushed and sometimes we may not be able to immediately ship an item until it has been cut and hung for a number of days. However we will normally despatch your order within 48hrs of receipt during the working week . If you are not at home we can arrange to leave your box in a safe place or with a neighbour or we can arrange delivery to your work. Please note we do not despatch on Fridays or deliver on Saturdays due to cost and reliability.
e.g. Monday orders shipped Wednesday for delivery Thursday,
Tuesday orders shipped Thursday for delivery Friday,
Wednesday, Thursday & Friday orders usually shipped Monday for delivery Tuesday.

Back Orders

If your item is not in stock, we will back order for you. You will always be emailed with the option to cancel your order if you would rather not wait.
