Dales Show Season

As the Yorkshire Dales Show season gets going the Paganum Food Stall will be making an appearance at both Malham Show on Saturday the 28th August.  Also this year the Wildman Hogroast will be cooking up some great Pork & Crackling at Malham.  With no time for a rest we then move onto Kilnsey Show on Tuesday the 31st of August where our stall will be in the Food & Farming marquee, please do call in and say hello at the Shows.

Just a note to say thanks for the fantastic service. I ordered a Rib of Beef from you for a family celebration and Easter dinner, You delivered it perfectly, 36 hrs before it went in to the aga and the result was simply perfection.
With out any doubt it was the tastiest, tenderest most succulent roast beef we have ever eaten, (I used to work for a beef supplier for M&S and Waitrose, and it knocked them in to the mainstream and mediocre,) Truly fantastic. Just wanted to give you some feedback, best ribeye I have tasted in a long time, Great flavour, tender and a good size. Way better than buying from a supermarket...I have recommended to some of my colleagues in the office so expect some new customers and also repeat orders from me. Mr A Lloyd, London


Bacon, clean as a whistle no gooey white stuff and the fat that drips out is perfect for frying eggs.


Mince, following my usual recipe I made the best tasting bolognaise sauce this week , all down to minced beef, more like steak tartar than what I usually buy as minced beef.


The Lamb I boned and butter-flyed. Then did a Jamie on it, marinated for 24 hours in yoghurt, mint and coriander then baked on a trivet for one hour and served with a Greek salad and pita bread. The lamb was fabulous can't think of a time I've had better. Mr P Wraith, Huddersfield

Many thanks to all who visited our stand in the food hall at The Yorkshire Dales Food Festival at Leyburn this year, the Chorizo tastings went down a storm and we had great interest in our cold pressed rapeseed oil and of course the Sausages & Bacon.

Extra Virgin Cold Pressed Rapeseed oil has a wonderful light nutty flavour and can be used in salad dressings, mayonaise or as a cooking oil.

We can supply in a variety of sizes, 20 litre drum, 5 litre large bottle, 3 litre plastic bottles or 1 litre, 500ml & 200ml refillable flip top glass bottles.

Buy ready bottled in kilner style flip top bottles or the eco option is you buy an empty bottle and fill yourself from the bulk 5 litre bottle, which makes it very economical.

Yorkshire Rapeseed oil is high in Omega 3 & Omega 6, contains half the fat of Olive Oil is high in unsaturated fat and low in saturated fats.

This oil is just cold pressed, filtered and bottled, no heat or chemicals are used.

Take 3 Chef's

Settle Sheep Shambles kicks off with another ‘Take 3 Chefs…’ local food event in Settle’s Victoria Hall on Wednesday 13th May.

 

Doors open at 7pm with a chance to try cheese tasting with Booth’s Cheese Expert Susan Robinson, learn more about ways to reduce food waste with John Sutcliffe, Recycling Officer with Craven District Council and find out about Paganum, an online farmers market based in Malham supplying meat and produce from family farms and small artisan firms direct to the consumer.

 

Food demonstrations start at 7.30pm and this year’s line up of chefs are John Pratt, head chef at The Traddock in Austwick, and Ben Atkinson from The Falcon Manor and Richard Wallbank from Ravenous, in Settle, who will be showing us their favourite dishes using local produce.

 

Following the demonstrations there will be time to talk to the chefs and our other guests.

Following the successful appearance at last year’s event of Craig Allen and Chris Oakden from The Coniston Hotel, they can be seen demonstrating at the Great Yorkshire Show in July.

The Dales Festival of Food & Drink

We had a great three days in Leyburn and met a lot of existing and new customers, thanks to everyone who said hello!

The North's Premier food & drink event, featuring The Yorkshire Dales Real Ale Festival and Farming for Food, Come and join the Party in the Dales!

Over 80 local food stalls in the food hall, free cookery demonstrations by leadign chefs, live animals, real ale festival with a choice of 40 beers, wide choice of catering with covered picnic area, 6 hours of live music each day including brass and trad jazz bands, speakers including Gervasse Phinn (Sunday) and children's fairground attractions.
